Recipe: Hearty Pasta Sauce

This pasta sauce is one of my wife’s favorites. I decided to make a sauce that combines sweet, savory and spicy in one dish and this was the result. This sauce works well over penne or rotini (as pictured.)
Hearty Pasta Sauce
1 large sweet yellow onion
1 clove minced garlic (1/2 t)
1/2 pound hot Italian sausage
1/2 pound ground chuck
3T olive oil (Regular, not extra virgin)
1/4 cup red wine (A nice Chianti. Favre beans optional.)
2t Italian seasoning (From McCormick. A mixture of oregano and other Italian seasonings.)
red pepper flakes
1 can tomato paste (6 oz.)
1 can crushed tomato (28 oz.)
2T brown sugar (light)
salt

1/2 cup water1. Heat olive oil over medium-high heat in large sauce pan or dutch oven.
2. Dice onions. Place onions and garlic in olive oil. Add sausage and hamburger.
3. After meat has browned, add wine, Italian seasoning and red pepper flakes to taste. Cook for an additional five minutes over medium heat.
4. Add tomatoes, brown sugar, salt, pepper, and water. Cook over low-medium heat for an additional one to two hours. Taste occasionally and add additional salt and pepper as needed.
